Beans and potato are available throughout India and are used for preparing different main course dishes - stir frying, in sambars, vegetable currys with gravy etc. Posted here is a simple recipe for beans potato curry with a sauce prepared using milk and cashew.

 - preparation time - 20 minute
 - cooking time - 20 - 30 min
 
- Beans - 250 gms
 - Popatoes - 2 medium
 - Onions - 1 big
 - Garlic - 5 cloves
 - Kasuri methi - 2 spoons
 - Milk - 1/2 cup
 - Cashew nuts - 10
 - Sabzi masala - 1 1/2 spoons
 - Cumin - 1/2 spoon
 - Oil - 2 spoons
 - Turmeric - 1/2 spoon
 - Salt - to taste ( 1 spoon)
 - Coriander - 2 sprigs
 
- Wash and cut beans, potatoes and Onion as shown
 - Chop garlic cloves, coriander
 - Heat oil in a wok and add cumin seeds, followed by turmeric powder and onions,
 - Saute onions till translucent.
 - Add cut potatoes and beans and fry for 2 minutes
 - Sprinkle little water, add salt mix and simmer covering the wok with a lid (see pic) for 10 minutes/till vegetables soften with occasional stirring
 - Grind cashew, kasuri methi and subzi masala with little milk to a smooth paste and keep aside
 - Add cashew paste to cooked vegetables and add rest of the milk. Mix thoroughly and cook for 1/2 a minute.
 - Garnish with chopped coriander and serve with wheat rotis, phulkas
