GORIKAYI CHUTNEY/CLUSTER BEANS CHUTNEY

Cluster bean is unique. Unlike other beans this bean imparts a slight bitter taste. This deters people from using this very healthy veggie. However, transform this veggie into a chutney/dip  in combination with onion and garlic and sell it easily to unsuspecting people who will down this in spoonfuls.

Ingredients 
  • Cluster beans - 100 gms
  • Onions - medium sized - 2
  • Green chillies - 4
  • Garlic cloves - 4-5
  • Grated coconut - 1/2 cup
  • Tamarind - 1 marble sized
  • Salt to taste
  • Curry leaves - 1 sprig
  • Mustard seeds 1 spoon
  • Oil - 1 spoon
Method
  • String beans, cut onions, and pressure cook with chilli, garlic in a cooker to 1 whistle, Keep aside and cool
  • Grind cooled veggies with tamarind and salt, Finally add coconut and grind again to a coarse paste.
  • Prepare seasoning with mustard and curry leaves and add to chutney - (heat oil in a wok, add mustard let it crackle, add curry leaves) .

  • Serve this chutney with plain steamed rice, rotti/ chapathi
  • Spread it on toast
  • Add ginger to enhance taste/for its goodness.
