It was a lazy evening, was feeling bored. Decided to watch a movie on the big screen. I knew the experience would be incomplete without some munchies and hot coffee. Ever favorite addictive onion pakoda was the best bet. So there I was ready with a platter of pakoras in 20 minutes ready to watch movie of my choice with my hubby. You think I am bluffing? Try it is definitely possible to make these adorable fritters in a jiffy provided you have all the ingredients handy.
So here is how it goes
- Ease - very easy
- Preparation time - 10 minutes
- Cooking time - 10 minutes
- Quantity - makes about 15 - 20 nos
- Medium sized onions - 2
- Besan /Bengal gram flour - 1 cup
- Rice flour - 3 spoons
- Coriander - 4-5 sprigs
- Curry leaves - 2 sprigs
- Green chillies - 2-3
- Cinnamon powder - 2 pinches
- Salt to taste
- Oil for frying
Method
- Cut onions lengthwise (julienne) as shown
- Wash and chop coriander and chillies
- Heat oil in a wok on low flame
- In a bowl mix all the ingredients mentioned , add 2 spoons of hot oil and leave it for 2 minutes
- Knead the mixture with the moisture/juices released (do not add water)
- Check for the temperature (release a small bit of pakoda mix into hot oil, if oil is hot enough mix will come up)
- Hold handful of pakoda dough /mixture and start pinching off desired sized pakodas into hot oil
- Fry till golden brown on medium flame and take pakodas out and serve.
- Never let oil smoke - frying will not be proper crust will form even before inner core is cooked/fried.
