SPRING ONION POTATO SANDWICH

Breakfast is an important meal... , there is time crunch,... morning rush,.. you have to eat healthy,,, exhausted all options.

Let me tell you the genesis of this preparation. Hubby brought home organic whole wheat bread . wanted to lessen my efforts in fixing breakfast? I am not a big fan of bread for breakfast. I had no cheese in my fridge. Had spring onions and off course potatoes. Potatoes good source of complex carbs and magnesium and greens from onions - decided to go ahead. Result a yummy, sumptuous, scrumptious sandwich and happy customers.

  • Serving - 7 - 8 sandwiches
Ingredients
  • Spring onions - 1 bunch
  • Potato - 1 big
  • Green chillies - 2
  • Coriander - 3 -4 sprigs
  • Garlic - 6-7 cloves
  • Ginger - 2 inches
  • Turmeric - 1/2 spoon
  • Pav Bhaji masala - 1 spoon
  • Salt to taste
  • Butter/Ghee/cheese singles - as per taste/requirement
  • Bread - 1 loaf
Method
  • Wash, peel and grate potato as shown
  • Clean, wash and chop spring onions as shown
  • Finely chop chillies, coriander, ginger, garlic in a veggie chopper (coarsely grind without water)
  • In a wok heat 1 spoon ghee, add all the ingredients and saute for 5-7 minutes till potato becomes translucent (sprinkle a few drops of water to avoid sticking and burning)
  • Add salt, mix well and keep aside
  • Smear ghee/butter to a slice of bread and place 2 -3 spoons of sauteed potato mix , cover with another slice of bread and grill/toast in a snack maker/skillet till golden
  • Serve hot with a dip of your choice or tomato ketchup




Notes/tips
Add grated paneer/cheese for added taste
Avoid tomatoes in this - they render sandwiches soggy
