TOMATO RICE


Rice is a staple in this part of India and is eaten with sambar/curd etc. However plain steamed rice can be transformed into mouth watering wholesome dishes by mixing vegetables and spices/herbs. Tomato rice bath is one such dish and is also served in restaurants. Tomato bath posted here is my simplified version yet tastes good.

Ingredients
  • Rice - 1 cup
  • Tomatoes - 2 big
  • Onions - 2
  • Bay leaves - 1
  • Cloves - 2
  • Cardamom - 2
  • Turmeric - 1/2 spoon
  • Cinnamon powder-1/4 spoon
  • Coriander/dhaniya powder - 3/4 spoon
  • Chilly powder - 1/2 - 3/4 spoon
  • Garam masala - 1/2 spoon
  • Chopped green chilly - 1 table spoon
  • Chopped coriander - some
  • Salt to taste


Method

  • Cook rice in a pressure cooker with 2- 21/2 times water and for 3 whistles
  • When rice is cooking cut tomatoes and onions as shown
  • In a wok heat oil add mustard after it splutters add onions, bay leaf and chopped green chillies. Saute till onions become translucent. Add turmeric powder, coriander powder, chilly powder, crushed cardamom and cloves, fry for a minute.
  • Add tomatoes and fry till water evaporates. Add garam masala and salt mix well and fry for a min.
  • Add plain rice to this fried tomato, add additional salt if required. Mix throughly and garnish with coriander
  • Serve with raitha/wafers/chips.
