Raw banana/ plantain is a staple food in many parts of Africa and in the Southern state of India, Kerala. Raw banana is used for making currys, stir fired accompaniments and chips. Raw banana/plantain have tough skin, green in colour and skin needs to be peeled using a peeler. The inside of the banana is hard and cannot be eaten directly - it has to be baked/fried/cooked before consumption. With rich fiber content and magnesium, raw banana is a desirable vegetable for good health.

- Raw bananas -2
- Turmeric powder - 1/2 spoon
- Hing powder - 1/2 spoon
- Red chilly powder - 1 spoon
- Salt - to taste
- Sugar - 1/2 spoon
- Oil for frying - 3 -4 spoons
- Mustard seeds - 1 spoon
- Peel and cut banana into slices as shown. Leave the slices in water with a spoon of butter milk to avoid discoloration
- In a thick bottomed wok/kadai heat oil add mustard seeds, after they splutter add turmeric, hing and chilly powder. Add sliced banana and stir softly ( turn and toss - do not use choppy movements)
- Banana starts becoming soft and absorbs oil with spices. Add sugar, toss for a min and remove from fire.
- Stir fried banana is ready now
Tips
- Caramelized sugar helps in spices adhering to banana slices
- This dish can be served with rasam rice/curd rice /dry vegetable accompaniment with chapathis
