PUDINA DOSA

Dosa the eternal breakfast delight could be prepared in any avatar depending on ones imagination and skill. Posted here is pudina dosa which I prepared using left over Idli batter. Idli batter will contain 1: 2 of urad dal and rice, however dosa batter normally has higher rice content. So to your left over idli batter add some rice flour to adjust the consistency add herbs, spices and prepare dosa as usual. It tastes great with simple curd and pickle.

Ingredients

   
  • Left over idli batter - 1/2 lt ( approx)
  • Chopped onions - 1 cup
  • Pudina - 1 bunch
  • Coriander - 3 sprigs
  • green chillies - 2
  • Besan flour - 1/4 cup
  • Rice flour - 3/4 cup
  • salt to taste
  • oil - to drizzle on the dosas
Method
  • Prepare a paste of pudina, chillies and coriander
  • Mix besan and rice flour with water to make a smooth paste by adding 1/2 - 3/4 cup water.
  • Add ground pudina paste, chopped onions, flour paste and salt to idli batter and leave it for 10 min.
  • Start making dosas on medium flame.


  • Spread batter on a hot griddle, drizzle oil, roast till golden, flip, cook for 1/2 min and flip back again, roast to regain crispness and serve with pickle and curd.
