Set dosa is a pan cake made with rice, urad dal and puffed rice. Unlike other dosas set dosas are spongy soft with crispy crust. This dosa is paired with coconut chutney, potato onion sagu (gravy) and butter.
Having said that I must confess that I hated khali dose aka set dose when I was a teenager. For me only masala dosa or ghee roast were appealing. As I grew up I developed fascination for set dosa specially served with flowing coconut chutney, that would fill the pores in the dosa while dipped, and butter. So yummy!. I would always wonder how do they get spongy texture which is so endearing. After getting gyan from cooks, hoteliers and old timers I figured out a recipe and tried to standardize my style. I keep boasting about my dosa making abilities and my son seconds my opinion.
Now we will get started ....
Time Required
- for soaking 10 minutes (previous day)
- for grinding 10 minutes (previous day)
- for making dosas 30 - 45 minute Quantity - to make 12 - 15 medium sized dosas ( enough for 4 persons)
- Dose rice - 4 cups
- Urad dal - 1 cup
- Fenugreek - 2 spoons
- Puffed rice - 1 cup
- Sour curd - 2 table spoons
- oil - for drizzling on the dosas Method
Wash and soak rice , urad dal and fenugreek together in about 6 cups of water for 5 - 6 hrs.
Soak puffed rice separately with enough water.
Grind all the ingredients together to a smooth paste (water used for saoking to be used).
Add curd and leave it overnight for fermenting.
Next morning before making dosas add salt to taste and mix well
Making dosas
Heat a griddle/tava on medium flame.
Check for heat by sprinkling water. If griddle is hot enough water will evaporate. Spread oil or ghee, wipe the griddle/tava of excess oil and start making dosas.
Pour the batter on the griddle and spread gently(1/2cm thickness)
The batter rises while cooking forming pores.
Drizzle oil/ghee and roast on medium flame till golden, flip the dosa ans roast the other side on slow flame. Take out the dosa and start next one.


Tips
- Dosas should be prepared on moderate heat
- You can add 1/2 cup rice flour if you want firmness in dosas. I have not added.
- Do not add too much water while grinding. You can adjust thickness of the batter after grinding.
