Avalakki, beaten rice is used to prepare quick breakfast dishes. It is also used for making Chivda a savory snack. Beaten rice is available in many varieties - thick, paper thin, red, medium thick etc. Avalakki is a source of carbohydrates can be enriched by adding vegetable, spices, greens, peanuts etc.

Ingredients
- beaten rice (thick) - 250 gms
- onion - 1 big
- carrot - 1 big
- capsicum - 1 big
- grated coconut - 1/2 cup
- curry leaves - 2 sprigs
- coriander - 2 sprigs
- green chilly - 3
- ginger - 1 inch (optional)
- oil for seasoning
- mustard seed - 1 spoon
- garam masala - 1/2 spoon
- Wash and soak avalakki (beaten rice) in water
- Finely chop onions, capsicum, carrots, chillies, coriander separately
- Heat a thick bottomed kadai, wok on a medium flame, add oil and heat
- Add mustard, let it splutter, add curry leaves, green chillies, onions and saute till onions turn golden.
- Add chopped carrots and capsicum and stir fry for 5 minutes
- Add chopped ginger add garam masala, fry for a minute
- Add salt , mix well.
- Add avalakki to this after draining all the water.
- Simmer for 1 minute and remove
- Sprinkle grated coconut and chopped coriander.
- Vegetable masala avalakki is ready to be served.
- Cabbage, cauliflower, spinach, methi green can also be used
- Use thick flakes to get separate grains thin flakes will yurn the dish gooey.
- Red rice flakes can also be used
