Gulpavate unde is a very healthy snack for all ages especially for children. Packed with goodness of malted wheat flour, jaggery , pure ghee and dry fruits this can be a good substitute for energy bars. Children can definitely have this for their short breaks in the school. This addictive sweet is simple and easy to prepare
- Ease - easy - have to get the consistency of jaggery syrup correctly.
- Preparation time - 15 mins
- Cooking time - 30 minutes
- Wheat flour - 2 cups
- jagerry - 11/2 cups
- Grated desicated coconut - 2 cups
- Ghee - 1 cup
- Dry fruits - 1/2 cup
- Cardamom - 5-6
- Cloves - 5 -6
- Cinnamon dust - 2 pinches (optional)
Method
- Roast wheat flour under very low flame with a spoon of ghee till aroma wafts
- In a thick bottomed wok heat 2 spoons of ghee and roast the dry fruits keep aside
- Heat 1 1/2 cup water in the same wok, dissolve jaggery and keep heating till you get sticky /gummy consistency, add coconut, ghee, dry fruits, cardamom cloves powder, a pinch of cinnamon powder and bring to boil.
- Add roasted wheat flour and fold nicely. keep aside.
- After the mixture cools make golf ball sized undes, After they are completely dry and cool store in an air tight container
Notes
- Originally wheat was roasted and powdered in a grinding stone for making gulpavate
- Jagerry syrup consistency - antu paka - sticky consistency is the key for good gulpavate
- Dry fruits are added to make the dish nutricious, it is optional
- I do not add milk because the unde will get spoilt very fast
